The health-grade green coffee standard proposed in The Coffee Guide to Better Health is a starting framework to protect consumers and elevate the category of Circular Health Coffee. The aim is not to dictate a final rulebook but to spark collaboration, inviting coffee and wellness professionals to form a working group that develops trusted, science-based standards. The section below shows green arabica grading standards for Circular Health Coffee as a starting point. The emphasis is on starting point, because the coffee industry generally needs to become aware of new standards for food safety in coffee, and it is a learning curve. For decades (centuries) producers, millers, exporters, importers and roasters have not focused on food safety other than moisture control. Scientific studies on coffee, health, soil, mycotoxins and other issues are new to many of those in the industry all over the world. We respect our industry colleagues, and although we want to meet them where they are at, we also want to challenge them to learn and be motivated to make necessary changes, upgrades and improvements.
